Valentine’s Day Eats

I challenge you and your Valentine to make this meal TOGETHER as a team for date night! It could be fun and a chance to work on those team building skills! Orrrr it could go horribly wrong and you end up hating each other! Let’s hope not! If you’re kicking it solo, I’m challenging you too! Take some time to love/ treat yourself! I wanted a dinner that wasn’t too complex so you wouldn’t have to spend your entire V-day in the kitchen! Also this dinner won’t leave you feeling super sluggish and tired. So you shouldn’t have any issues participating in any physical actives that happen to arise afterwards. You know, if you and your date wanted to go for a jog or something. Happy cooking you filthy animals!

Garlic Town

Roasted garlic butter is super easy to make and takes no time! I always make extra since it can be used for so many other things! I don’t recommend using it as a massage oil though…I DO recommend it for the steaks and mashed potatoes in this recipe!

Ingredients

2 garlic Heads

1 teaspoon salt and pepper

1 tablespoon olive oil

Pre-heat oven to 400 F. Slice off the top of the garlic heads then place into a baking dish. Drizzle the oil, salt, and pepper on top of the garlic. Cover with lid or foil. Place in the oven and bake for 35-40 minutes! Remove from the oven and let cool. The smell of the house will have you believing that you really know how to cook!

Roasted Garlic Butter

2 Heads of Roasted Garlic and 2 Sticks of softened butter (room temp)Squeeze roasted garlic onto butter, add a few pinches of salt and mix up well! Pour butter onto wax paper and chill in the freezer for 10 minutes. Remove from freezer. Set to the side.

Roasted Veggies

Pre-heat oven to 400 F

1 yellow Zucchini

1 Green Zucchini

1 Red Bell Pepper

Mushrooms (not the magic kind)

Chop, slice, dice, or whatever the hell you want to do, do it! Then toss this colorful goodness into a large bowl, with 2 teaspoons of olive oil. 1 Teaspoon Salt, 1 Teaspoon Pepper and 1 Teaspoon Italian Seasoning.

Toss and mix until covered in oil and seasonings. Spread it all out onto a baking sheet. Make sure you spread them out so you don’t end up with flaccid vegetables. Roast in the oven uncovered for 20 minutes:)

Mashed Tates

5 Russet Potatoes

2 teaspoons Salt and Pepper

1/2 cup Cream Cheese

1/2 cup Half and Half

1/2 Cup Roasted garlic butter

Dice and boil potatoes for 15-20mintues. Use a fork to check if done, if the fork goes through the potato easily you’re good! Strain the water and place potatoes in a mixing bowl. Mash the potatoes and add dry ingredients first, then wet ingredients. After mashing use an electric mixer to smooth out lumps. Throw your mashed potatoes back into pot and turn on medium heat. Stir frequently so it doesn’t burn or stick to your pan. Heating the potatoes helps absorb the half and half so you don’t end up with soggy tates.
